Hummus
You say you have a bunch of cans of garbanzo beans and nothing to do with
them? Make some of this stuff. You will need some $ to buy a thing of plain
non-flavored yogurt, but if you have any spices around at all this will probably
work.
I don't know where I got this recipe -- I lost the URL ages ago --
but thanks whoever you are!
Chop in food processor (a blender will work but it's messy) until well-pulverized:
- 2 cans garbanzo beans, drained
You are aiming for something kind of like
the consistency of creamy garbanzo butter, if there ever were such a thing.
Add to this muck:
- Juice of two small lemons
- 3 to 4 tablespoons yogurt
- 1 to 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon sugar
Now, run the blender 'till your heart's (and your tongue's) content.
Optionally, garnish with a bit of
- Olive oil
And some
- Chopped fresh parsley
if this is the kind of thing you like to do...
I prefer simply getting enough of it out of the blender/food processor to eat with crackers.
