Green Onion Pancakes

Ingredients
- 2 cups flour
- 2 1/4 tsp yeast
- 1/2 cup water 105 degrees F
- 1 tsp sugar
- 1/4 tsp salt, plus some more to sprinkle on the dough
- 4 tbsp olive oil, plus some more for frying
- Black pepper
- 2 bunches of green onions, chopped fine
Instructions
Mix the water, sugar, and yeast in a cup, and stir.
Mix the flour and salt using standing mixer with paddle attachment.
Mix yeast mixture into flour mixture using standing mixer until it forms a
dough ball. Let dough rise 45 minutes.
Divide dough and green onions into 4 portions. For each portion:
- Roll dough out flat on a floured surface.
- Cover dough sheet with 1/2 - 1 tbsp of olive oil. Spread it thinly and evenly.
- Sprinkle black pepper and salt over the dough.
- Sprinkle the green onions over the dough.
- Roll up the dough into a cylinder.
- Divide into three inch segments.
- Turn each segment on its side and then smoosh each cylinder into a flat disc.
Heat oil in pan. Pan fry discs until golden brown on each side (2-4 min per side). Let rest on a paper towel to remove excess oil, then eat... but be careful, they're hot.
